Ingredients:
16 prawns
200 g of chirlas
200 g thin noodles
1 red onion
1 carrot
80 g green beans
2 strands of saffron
Parsley
Olive oil
Salt

Sautéed noodles with chirlas and prawns are a very complete, energetic and non-heavy delight for the senses thanks to the low calorie content of seafood and the powerful fat burning effect of these two ingredients.

In addition, as they combine carbohydrates with proteins and fiber, they are ideal as a single dish. And they have that festive touch that seafood gives both to surprise guests with a succulent dish and to feast ourselves one day, because yes, because we are worth it.

How to do it step by step

  1. Prepare the seafood . First, soak the chirlas so that they release all the sand and impurities. Make it in salty water and let them soak for about 30 minutes. Then, peel the prawns - preserving the heads and shells - and remove the casing.
  2. Make the broth . Take the heads and shells of the prawns that you had reserved and sauté them in 2 tablespoons of oil for about 3 minutes or so. Add the saffron threads, season, cover with 6 dl of water and cook for about 5 minutes.
  3. Cook the noodles . Strain the broth from the prawns. Then put it back on the heat and cook the noodles for about 6 minutes. And finally, remove, cover and let it rest for 5 more minutes.
  4. Sauté the vegetables . Peel the onion. Scrape the carrot and chop both. And cut the beans into thin strips. Sauté all the vegetables for about 3 minutes. Add the prawns and the rinsed and drained chirlas, and sauté 2 more minutes until the chirlas open. Add the noodles and parsley, mix carefully and serve.

To give the dish more flavor and aroma, in step 2 let the saffron toast a little before adding the water to make the broth. But be careful, as saffron burns very easily

As much the chirlas as the prawns and all the shellfish in general, apart from containing very little fat, are foods rich in vitamins of the group b (b12, b3 …) that are essential to convert fat into energy.
