1 turkey breast
2 oranges
60 g of pistachios

1⁄2 l poultry broth
1 tablespoon of olive oil

Meat rolls are an ideal recipe as a party dish when you have a lot of people and you don't want to be cooking and suffering until the last minute, or to solve a fast meal. You can make them in advance and freeze them, or keep them in the fridge until lunchtime and serve them cold or heated in a plis plas.

In this case, in addition, as the meat we use is turkey, rich in lean proteins, and we combine it with orange and pepper, two effective fat burners, resulting in a very energetic and light dish at the same time.

How to do it step by step

  1. Prepare the filling . On one side, mash the pepper. On the other hand, blanch the pistachios in boiling water for about 1 minute; drain them, remove the skins that cover them, and chop them. And finally, grate the skin of 1 orange.
  2. Fill and make the meat roll . Spread and flatten the turkey breast on the board with the help of a rolling pin if necessary. Season and sprinkle over it, the crushed pepper, the chopped pistachios, and the zest of the orange peel. And to finish, roll the breast lengthwise so that it looks like an elongated roll.
  3. Roast the meat . Place the breast roll in a baking dish. Water with the poultry broth, cover the source with aluminum foil and bake it in the oven that, previously you will have preheated to 180 degrees, and let it cook for about 40 minutes.
  4. Prepare the sauce and serve . Heat the juice of the 2 oranges together with the two tablespoons of sugar and let it reduce. Cut the roll into medallions and serve them washed down with the orange sauce. If you want it to be more attractive, you can make a bed with a couple of orange slices, place the medallions on top and sprinkle a little chopped pistachios and orange peel on top.

Remember not to put so much stuffing on the ends of the meat to avoid that, when rolling it, the content ends up sticking out. Then, tie it with kitchen twine with several wraps across the width and also one lengthwise. And if you prepare it in advance and cut it cold, you can make finer and cleaner cuts.
