8 pork tenderloin steaks
8 slices of brie cheese
200 g of piquillo peppers
2 cloves of garlic
1 spoon of sugar
50 ml of white wine
4 tablespoons olive oil
1 sprig of parsley

Here you have the classic pork tenderloin pepito with traditional peppers , but much lighter by dispensing with the bread rolls that are normally served.

In addition, if you give up the sauce that we propose and put the piquillo peppers as is, it will only take you to cook it as long as it takes to heat the grill and fry the tenderloin. And if you accompany it with a salad or some sauteed or steamed vegetables, you have a balanced and very tasty unique dish.

How to do it step by step

  1. Brown the garlic. First, peel the garlic and cut it into thin slices. Then, heat half the oil in a nonstick skillet and sauté them until golden brown.
  2. Make the pepper sauce. First of all, drain the peppers, reserving the preservation juice, and cut them into strips. Then add them to the pan where you have browned the garlic and sauté for a few moments. Then add the sugar and wine, and let it evaporate. Finally, pour 3 tablespoons of the juice of the peppers that you had reserved and stir it while it cooks for 1 minute. Withdraw.
  3. Grill the tenderloin. Salt and pepper the fillets and grill them on a griddle greased with the rest of the oil. Approximately 2 minutes on each side. Place 1 slice of cheese on each of the loin fillets and continue cooking until slightly melted.
  4. Assemble the platter. Finally, distribute the fillets on plates over a little of the sauce that you had prepared. Place a few strips of pepper on top of the loin and cheese montaditos, and a few leaves of washed and dried parsley to decorate.

A different presentation

Another option when presenting it is to use the classic recipe for the loin pepito and place the fillets with the cheese and the peppers on toasted slices of ciabatta bread.

You can make the same recipe by substituting the sirloin steaks for roasted or grilled aubergine strips. Or also with some slices of baked potato, for example. Delicious and without a trace of meat.
