Prepare the fruits

Prepare the fruits

On the one hand, wash the apricots, cut them in half and remove the bones. On the other hand, remove the bark from the pineapple, and cut it first into slices and then into cubes, removing the fibrous central trunk. And finally, sprinkle both fruits with the vanilla sugar.

Caramelize the fruits

Caramelize the fruits

Heat the sugar in a skillet and when it starts to caramelize, add the butter. Then add the fruits, and sauté them for a few moments, stirring so that the caramel covers them evenly.

Brown the pine nuts and serve

Brown the pine nuts and serve

In a non-stick frying pan, brown the pine nuts without adding fat, stirring continuously so they do not burn. And finally, divide the fruits into four bowls, add a scoop of yogurt ice cream to each one, sprinkle with the pine nuts, and serve right away.

An infallible idea to take more fruit when it resists us is to look for a much more tempting accomplice, such as ice cream (without forgetting that it is much more caloric than fruit, of course).

This is what we have done with our caramelized fruit with yogurt ice cream, which in addition to accompanying it with delicious ice cream, we have caramelized it to give it a more sophisticated touch.

As you will see in the step-by-step image gallery that you have above, a super easy dessert, which is made in about 30 minutes or so and with spectacular results!

Ingredients:

  • 6 apricots
  • 2 slices of pineapple
  • 4 tablespoons sugar
  • 20g butter
  • 1 teaspoon vanilla sugar
  • 4 scoops of yogurt ice cream
  • 2 tablespoons pine nuts

How to caramelize fruits

  • One of the traditional ways to caramelize fruits is by adding a little butter in addition to the sugar. But if you want, you can do without this fat because it is very caloric, and with the sugar they are only as good.
  • There are also those who cook the fruits in a little water before caramelizing them. If you opt for this method, try not to let them cook too much because they are in danger of falling apart. We have chosen to caramelize them raw because that way they do not fall apart and remain al dente.
  • And another way to caramelize is with a kitchen torch, or with the help of the oven. You just have to place the pieces of fruit well distributed in a refractory source, cover them with the sugar, and burn it with the blowtorch. Or put them to gratin in the oven for about 4 or 5 minutes more or less.

How to make homemade yogurt ice cream

It is very simple. You only need yogurt, whipping cream (at a rate of half as much cream as yogurt). And a tablespoon of honey for each yogurt.

  1. Mount. On the one hand, whip the cream and reserve.
  2. Mix. Then, in a glass bowl, mix the yogurt and honey, and incorporate the cream with enveloping movements.
  3. Freeze. Cover it with plastic wrap and put it in the freezer. After 45 minutes or so, stir the contents with a fork to prevent crystallization.
  4. Stir. Repeat this step for 4 to 5 hours. And you will have the ice cream ready.

To handle it easily, the ideal is to transfer it from the freezer to the refrigerator about 20 minutes before serving.
