How to make light tiramisu step by step

  1. Prepare the eggs. Separate the yolk from the whites. Beat the yolks with half the sugar. Assemble the whites to a very firm snow point, and add the remaining sugar with enveloping movements so that it does not lose volume or consistency.
  2. Mix with the cottage cheese. First, add the cottage cheese to the yolks and mix it. Then, add the whites and mix them too, but without beating, so that the whole does not lose body or fluffiness.
  3. Strawberry moment arrives. On one side, mash half of the strawberries. And on the other, cut the rest into slices and reserve them.
  4. Assemble the tiramisu. Place the sliced ​​strawberries first and on top, alternate layers of cream and strawberry puree.
  5. And now to cool down. Put it in the refrigerator to set and, after a few hours, serve it cold, garnished with the crushed pistachios on top and, if you want, a whole strawberry and a few mint leaves.

Improvise other versions

If you don't have strawberries or you just don't like them, you can make the same tiramisu with other fruits. For example, kiwis, mango, pear … And replace the pistachios in the topping with other unsalted nuts: crushed hazelnuts, almonds, walnuts … Ah!
