The ultra-light fish soup is not only a delicious fish recipe that fits in parties and celebrations, but it is also suitable when you are on a diet since it only has 205 calories and, therefore, it is a 100% guilt-free dish .

To achieve this, we have dispensed with the potatoes or rice of the traditional versions, on the one hand; We have not used flour or bread to thicken the soup, on the other hand; and as the main ingredient we have used whiting and clams, which are rich in protein and low in fat.

In short, a super easy recipe that you can eat when you want to lose weight, and with which you will look like a real chef without having to scratch your pocket too much.

How to make ultralight fish soup

  1. Prepare the fish broth. Cook the whiting in two liters of salted water with one of the onions and the bay leaf. After about 8 minutes or so, remove the fish, remove the bones and reserve the meat. Add the heads and bones back to the broth and cook for another 15 minutes.
  2. Make the sauce. In another casserole, sauté the remaining onion, which you will have previously peeled and chopped. Then add the chopped garlic and carrot, and the chopped tomato. Sauté a few more minutes, water it with the wine and let it reduce for a few minutes.
  3. Finish the soup. Once the wine has been reduced, add the strained broth and the meat of the whiting that you had reserved, and cook for approximately 25 minutes. Salt and pepper to taste Add the clams and cook until they open. Sprinkle with the chopped parsley, and serve.
