2 carrots

1 small zucchini
20 g of peeled pine nuts

In addition to being very healthy, the vegetable-filled sachets have an exotic and mysterious touch, as a surprise gift. That's why we love them both as a party dish and for a special occasion. Whether to impress the guests. Or to feast ourselves, just because, because we're worth it. On top of that, they are super colorful and preparing them is very simple (more than it seems), so you look great without complicating your life.

How to do it step by step

  1. Prepare the tomato sauce. The first thing to do is peel the garlic, chop it and fry it in half the oil. And then add the tomato, the bay leaf, the sugar, the salt and the pepper, and cook it all covered for about 12 minutes. Enough so that the tomato is done and loses its acidity.
  2. Cook the vegetables from the filling. Scrape the carrots, and clean the leek and zucchini. Wash them and cut them into small squares. Take a frying pan and, with the remaining oil, cook - covered - the leek and carrot for about 5 minutes. Then, add the broth and add the zucchini, pine nuts, salt and pepper. Cover everything and let it continue cooking for approximately 6 minutes. And when it's done, put it in a drainer so it loses excess liquid.
  3. Assemble the bags and bake. To make them, you just have to superimpose the filo dough sheets, painting each one with oil. Thus, superimposed, they have more consistency and hold the filling without problems. Then cut out 8 equal squares and place a couple of tablespoons of the stewed vegetables in the center. Finally, close the bags and bake them in the oven, preheated to 200 ° C, for around 15 minutes.
  4. Plate and serve. Put a couple of bags per person in individual plates, and accompany them with the tomato sauce that you have prepared first.

One of the options to close the vegetable bags is to use kitchen string. But, if you want them to be more attractive, use stalks of chives. It gives it a fresh and very natural touch.

Alternatives to the vegetarian version

Our version is 100% vegetarian because it does not include meat or fish. But they can also be made by adding minced meat, shredded white fish, prawns to the filling … If you do, if you want, you can also change the vegetable broth for poultry or fish broth.
