To make light salad sauce, you just have to mix 6 tablespoons of lemon juice with two of oil and a pinch of salt and pepper. It is perfect to give a fresh touch and enhance the flavors of all kinds of salads.

  • More flavour. You can add minced garlic and parsley or other aromatic herbs; or also pickles like capers, pickles or finely chopped pickled chives.

Yogurt sauce is a classic in light salad dressings. It is made by mixing a yogurt with a couple of tablespoons of extra virgin olive oil, a couple of tablespoons of vinegar, salt and pepper. It is a great fit for both green salads and pasta salads.

To make this, mix 6 tablespoons of soy sauce with 2 tablespoons of olive oil and 2 tablespoons of lemon juice. It is made with 2 tablespoons of old mustard, 2 tablespoons of virgin olive oil, a couple of tablespoons of lemon juice and salt. Squeeze half a lemon and filter the juice. Put it in a bowl. Add 2 tablespoons of oil, 2 teaspoons of Dijon mustard, half a teaspoon of turmeric, and salt to taste. And mix gently until the sauce emulsifies. It is ideal for salads with avocado.

If you find lemon too acidic, try this delicious orange vinaigrette. You just have to mix 6 tablespoons of natural orange juice with 2 tablespoons of olive oil, salt and pepper and beat well until it emulsifies a little. It goes great for salads with fruits, seafood and chicken.
