Ingredients:
4 eggs
100 g of arugula
2 avocados
2 limes
12 cooked prawns
Salt and pepper
4 tablespoons olive oil

If you are looking for an easy, nutritious, attractive and inexpensive dish, the poached egg with avocado and prawns is your ideal dish. Not only does it have the triple nutritional power of eggs, prawns and avocados - rich in proteins and vitamins - but it is also very attractive for a meal or a party dinner and for very little money if you buy the prawns already cooked.

How to do it step by step

For the poached egg:

  1. Bring a pot of water to boil to make the eggs.
  2. Cut four 25 x 25 cm squares of plastic wrap.
  3. Line the inside of a small bowl with a piece of plastic wrap, letting the excess paper hang down the sides. Pour in a teaspoon of olive oil.
  4. Crack an egg into the bowl. Join the four ends of the paper and close by twisting until the egg is wrapped in a small package. Tie with a kitchen string.
  5. Wrap the four eggs in the same way.
  6. When the water starts to boil, lower the heat and cook the eggs for 3 to 4 minutes.
  7. Remove them from the hot water carefully and place on a plate. Remove the thread and remove the plastic wrap. Reservation.

For the garnish:

  1. Wash and dry the arugula. Reservation.
  2. Peel the prawns and reserve.
  3. Wash, dry and grate the skin of the limes. Then squeeze them out.
  4. Peel the avocados and cut into thin slices. Water them with the lime juice.

To the presentation:

Make an arugula crib. Spread the avocado slices on top, first; then the peeled prawns, and finally the egg. To top it off, season with salt and pepper and sprinkle the lime zest on top.
