Table of contents:

Anonim

Ingredients:
1 ripe but firm avocado
2 chives
300 g ripe tomatoes
50 g of sunflower seeds
1 lemon
100 ml olive oil
Salt
1 red chilli

If you like guacamole, you will love this avocado, tomato and onion salad with sunflower seeds. Why? Well, because it has the same ingredients as the typical guacamole: avocado, tomato and onion. In addition to the classic dressing: lemon and chilli.

A nutritious and refreshing salad that, in addition to being vegetarian, is 100% vegan (without a trace of ingredients of animal origin), super easy to make and very economical. Come on, a gem from our cookbook.

How to make avocado, tomato and onion salad with sunflower seeds step by step

  1. Cut the tomatoes and chives. On the one hand, wash the tomatoes. On the other, clean the chives, wash them and dry them. And cut both vegetables into small cubes.
  2. Make the vinaigrette. First, squeeze the lemon and filter its juice. Then, chop the chilli very finely and mix it with the oil, half the lemon juice and the salt.
  3. Prepare the avocado. Cut the avocado in half, peel it and remove the pit. Cut it into small cubes as well, and sprinkle them with the remaining lemon juice so that it does not rust.
  4. Assemble the plate and serve. In a large salad bowl, combine the tomatoes, chives, and avocados. Season them with the vinaigrette that you had previously prepared. Spread the sunflower seeds on top and serve. And if you want a more sophisticated presentation you can do it in individual glasses like those used for the prawn cocktail.
