A 100% guilt-free version of one of the most typical dishes in Spain thanks to a couple of tricks … Cook the potatoes instead of frying them, which is what makes them a real caloric bomb. And curdle the tortilla in a non-stick pan, which allows you to reduce the amount of oil to the minimum possible expression.

How to do it step by step

  1. Cook the potatoes. Wash the potatoes and cook them whole and with their skin in a saucepan with plenty of cold water. And when the water starts to boil, cook them for about 35 minutes or so.
  2. Drain and cut into squares. Once cooked, drain the potatoes, let them cool, peel them and cut them into small squares.
  3. Sauté the potatoes. To give them a crisp touch, sauté the seasoned potato squares together with the minced garlic in a pan with a thread of oil until lightly browned. But try not to burn them.
