Salads not boring at all

A simple salad of lettuce, tomato and onion can become a delicious dish if you dress it with a couple of teaspoons of these sauces and vinaigrettes.

Salad vinaigrettes

Salad vinaigrettes

The queens of salad dressing are vinaigrettes, which is much more than just adding oil, vinegar and salt to your salad. By doing it separately, you control the quantity better, mix it well and thus it is more consistent and better distributed. Here is the recipe for the basic vinaigrette and other easy and very helpful salad sauces. Take note.

Basic vinaigrette

Basic vinaigrette

The basic recipe for a salad vinaigrette is as simple as mixing a tablespoon of olive oil with a tablespoon of vinegar (or lemon if you don't like vinegar), a pinch of salt and a touch of spices or aromatic herbs (rosemary, mint …) –pepper, for example, is one of the spices with a fat burning effect–. And beat it all together until the ingredients are well linked.

Yogurt sauce

Yogurt sauce

You just have to mix a yogurt with a tablespoon of olive oil and a tablespoon of vinegar, salt and pepper and whisk. To give it more aroma, you can add a spice or aromatic herb: chopped chives or parsley, fresh mint, dill …

Honey Mustard Sauce

Honey Mustard Sauce

In a bowl, put three tablespoons of olive oil, a couple of mustard, one and a half of white vinegar, and one of honey. Add a pinch of salt and beat until emulsified. The honey mustard sauce is also very good with a little minced garlic, which you can put raw or sauté so it is not so strong.

Mustard vinaigrette

It's super easy. You just have to mix two tablespoons of olive oil with two of vinegar or lemon juice and two of old mustard (I like the one with seeds). If you want it to spread more you can add a little milk and beat it well until it is well linked. And you can give it an original touch by adding a couple of chopped walnuts.

pesto

In the blender glass, put a peeled and minced garlic clove, a handful of toasted pine nuts, a handful of fresh basil leaves, a couple of tablespoons of olive oil and beat until well combined. Then add 50g Parmesan cheese for a more traditional version or 50g fresh cheese or skimmed yogurt for a lighter version and mix well again.

Red pesto

Red pesto

In the blender glass, add six well-drained sun-dried tomatoes in oil, a minced garlic, 40 g of toasted pine nuts or peeled hazelnuts, and a few fresh basil leaves. Chop it well, add 50 g of grated Parmesan cheese and a tablespoon of oil, and stir until everything is well integrated. To cut calories, you can use dried tomatoes and soak them in warm water before using them.

Homemade Caesar Sauce

Homemade Caesar Sauce

First, mince 50 g of anchovies with a clove of garlic and mix well until you get a paste. Then, beat 3 egg yolks together with a teaspoon of Dijon mustard, a couple of oil and a couple of lemon juice, and beat until well combined. Then add the anchovy paste along with a couple of tablespoons of grated Parmesan cheese and mix well.

Homemade pink sauce

Homemade pink sauce

It is another of the most popular salad dressings. It pairs well with seafood salads and salpicones. But it is quite caloric. In a bowl with homemade mayonnaise , add three tablespoons of homemade tomato sauce, a teaspoon of honey, a dash of orange juice, another of lemon juice, and if you want a dash of brandy (but it is optional).

Light homemade mayonnaise

Light homemade mayonnaise

Put two egg yolks, two tablespoons of oil, a little lemon juice and a pinch of salt. Put the mixer until it touches the ingredients. Action it at a slow speed and do not move it until it begins to emulsify. Then add 200g of skimmed whipped cheese and beat in gentle up and down movements.
