Escoger la carne más económica
As a general rule, white meats (chicken, rabbit, turkey, pork…) are cheaper than red ones. Also, if you want to save a few euros, large pieces are more convenient than chopped. A whole chicken, for example, is better priced than loose breasts. And you can take advantage of practically everything: with the meat of the wings and the liver you can prepare delicious croquettes or some cannelloni, and make the amount of meat increase by mixing the chicken with caramelized onion, some mushrooms and béchamel.
Choose the right piece
To obtain a meat dish as cheap as possible, it is best to choose second-rate cuts (pork shoulder, lamb skirt, black pudding, fin …), which are usually cheaper but just as tasty. The only drawback is that, being tougher meats, they will require recipes with a longer cooking time, such as stews or spoon dishes. Another option is to opt for organs such as the heart or beef liver. Very nutritious, but much cheaper than a steak.
Add a satiating plus
If you add potatoes, vegetables or even mushrooms to the meat stews that you are going to make, you will get much more satisfying dishes, which fill up without the need to use a large amount of meat. You can also prepare the meat in ragout, which because it has a lot of sauce is ideal to accompany it with rice or mashed potatoes, for example. And another option is to cook this type of meat filling them with vegetables, mushrooms, nuts, ham and cheese, fresh fruit …, with which you will get an inexpensive dish with a party look.
"Stretch" the minced meat
These inexpensive cuts are also great for chopping and making burgers or meatballs. If you add a little breadcrumb soaked in milk or whites to the mixture, you will get much more. You can also make cannelloni or lasagna and "stretch" the meat with other ingredients such as mushrooms, vegetables, béchamel, etc. Or you can grill the meat and cut it into very small pieces to make a homemade kebab, then mixing it with fresh vegetables between two slices of bread if you don't have kebab bread on hand.
