- 180 g of pistachios, peeled and soaked for 8 hours
- 480 ml of almond milk
- 100g sugar
- 1 tablespoon vanilla extract
How to do it
Drain the pistachios and grind them in the blender with the rest of the ingredients. Put the mixture in the fridge for 2-3 hours, stirring every 30 minutes so it doesn't freeze.

How to do it
Mix all the ingredients with a mixer. Put the dough in a mold 3-5 cm high, cover with plastic wrap and freeze for 4 hours. Stir every 30 minutes.

How to make ice cream step by step
- In a saucepan, place the yolks, milk, sugar, a pinch of salt and the seeds of the vanilla bean (cut lengthwise, open it and scrape inside with a spoon).
- With some rods, mix everything well and put it to heat over very low heat.
- Without boiling, stir with the rods or a wooden spoon so that it does not stick.
- When it has thickened, turn off, add the cold cream, mix it well and let it cool covered.
- Once cold, store it in the fridge to cool completely for a minimum of 8 hours.
- Finally, put it in the freezer and beat them with a mixer every half hour at least three times so that the ice crystals are broken and it aerates.
