If you buy it packaged …

How is smoked salmon made?

The base is always the same: brine (a mixture of salt and sugar) and smoked. The process is artisan, or should be, following traditional cold smoking techniques (30 degrees maximum). Low-resinous woods, such as beech or oak, are burned and the smoke is allowed to rise to the fish, without adding chemicals.

The most economical smoking

However, there is another more economical technique called “liquid smoking”, which consists of injecting smoke directly into the fish. It is cheaper than the baked one, but it only adds the smoky flavor, it really is not and leaves the fish raw.

The salmon smoked with this technique is ready in one hour compared to the several hours required for traditional smoking. It is noticeable on the palate because a sticky oil remains.
