Ingredients:
500 g of veal tapa in a piece
1 lemon
50 g of Parmesan cheese
30 g of arugula
4 dried tomatoes
4 tablespoons olive oil

If you are looking for an easy and very nutritious recipe, try the beef carpaccio. It is ideal to achieve an extra supply of iron when you have anemia, for example.

And if you accompany it with a simple salad, with the same ingredients as the accompanying dried tomatoes and arugula that we propose to decorate the dish –to give an idea–, you have prepared a light and complete meal without even having to touch the stove.

How to do it step by step

  1. Previous steps. On one side, cut the cheese into flakes. On the other hand, let the tomatoes soak in water to hydrate for an hour or so. And after this time, drain them and cut them into thin strips.
  2. Make the carpaccio. While the tomatoes are hydrating, wrap the piece of meat in kitchen wrap and put it in the freezer for about 30 minutes, so that it hardens slightly. Once the meat has cooled, remove it from the freezer and cut it into fillets as thin as possible with the help of a sharp knife. And finally, go arranging the resulting sheets in a source.
  3. Assemble the platter. On the one hand, wash the arugula. And on the other, beat the oil with the lemon juice, a pinch of salt and another of pepper. To serve it, you just have to season the meat with this sauce and decorate it with the parmesan flakes, the dried tomato strips and the arugula sprouts. A side that you can turn into a salad by increasing the amount of arugula and tomatoes.

Another possible sauce that suits the carpaccio wonderfully is to mix 80 g of light mayonnaise with 40 g of mustard and a few drops of Worcester sauce. Mix everything well until it has the consistency of a homogeneous sauce and that's it!

If you are in a hurry, remember that you can use the beef carpaccio already cut into thin layers and ready to serve that they sell in most establishments. And replace the dried tomatoes with tomatoes in oil, which are already hydrated, or cherry tomatoes, which are much less caloric.
