How to Make Low Calorie Cheese Stuffed Zucchini Step by Step

  1. Roast the zucchini. First, preheat the oven to 220 o . Meanwhile, wash and place the zucchini in an ovenproof dish. Season with salt and pepper, drizzle with the oil, and grill for about 10-12 minutes or so.
  2. Make the filling. Pass the cream and cheese with a pinch of salt and pepper through the mixer until you get a homogeneous cream. Add the black olives in small pieces and a little chopped parsley, and stir until everything is well mixed.
  3. Fill and serve. Cut the zucchini into 3 pieces. With the help of a spoon, remove some of the pulp from the inside, mix it with the cream cheese, and with the resulting dough, fill in the holes in the zucchini. To decorate, add a little ground pepper and a few parsley leaves.
