How to lighten sponge cake, cream, muffins, cookies and other desserts

  • Lowering the amount of fat. In those recipes that use oil, such as the classic sponge cake, for example, this can be substituted for Greek yogurt.
  • Reducing the flour and sugar. Incorporating apple, carrot or pumpkin, which provide sweetness and fluffiness without the need for flour or processed sugars.
  • Limiting the number of egg yolks. Whenever an egg has to be incorporated in a dessert, you can lighten it by following the rule of every two whites, one single yolk. This way you dispense with the most caloric part of the egg. The white is only composed of water and proteins.
  • Relying on light ingredients. Light margarine, defatted cocoa powder, and sweetener can perfectly replace the classic butter, normal cocoa, and sugar.
  • Choosing skimmed dairy. Whenever possible, reject whole versions of yogurt, cream, and milk. The skim versions have much less fat.

  • Replacing the "pump" toppings with lighter ones. Putting raisins instead of chocolate chips in cookies, for example. This way you add sweetness without the need to add sugar, and you reduce the amount of chocolate pearls needed.
