5 eggs
200 g of smoked salmon
50 g flour
40 ml milk

The pancakes with scrambled egg and salmon are an alternative to the classic toast with many more proteins, by substituting the bread for the egg pancake, and rich in omega 3 acids, thanks to the salmon.

How to do them step by step

The pancakes :

  1. Beat 1 egg in a bowl, then add the milk, a pinch of salt, baking powder, and flour. Let it rest for 5 minutes.
  2. Grease a 10cm frying pan with the olive oil. Heat it over medium heat. Put a quarter of the dough and roll it on one side until it begins to brown and peels off the pan on its own, about 2 min. Flip it over and do it on the other side, about 1 min.
  3. And repeat the same procedure with each of the remaining three-quarters until you get 4 pancakes. Cooking time may vary depending on the heat of the pan. The hotter, the shorter the time.

The scrambled egg:

  1. Beat the rest of the eggs, salt and pepper, add the cream and continue beating.
  2. Grease a frying pan with oil, pour in the beaten eggs and sprinkle some of the chopped dill.
  3. Stir with a non-grating spatula or spoon for about 3-4 min until the egg sets and forms a juicy scramble.

And the presentation:

Once the egg is set, spread the scrambled eggs over the pancakes, top with some slices of smoked salmon, and garnish with a little ground pepper, the remaining dill and a sprig of oregano.
