Zucchini noodles with red pesto

2 zucchini
6 dried tomatoes
1 spring onion
40 g of hazelnuts
1 clove garlic
1 sprig of thyme
50 g grated Parmesan cheese
Olive oil

Whether alone or mixed with pasta, zucchini noodles always triumph and help you add vegetable fiber to your diet. They combine well with any sauce that is usually accompanied by traditional pasta, but the truth is that with our red pesto they are to lick your fingers. You can check it yourself if you dare to do them. They are very easy.

How to do it step by step

  1. Prepare the vegetables. On the one hand, put the dried tomatoes in a bowl, cover them with lukewarm water and let them soak for about 15 minutes to later make the red pesto. On the other hand, stand out the zucchini, wash and dry them. To make the noodles, you just have to first cut them lengthwise into thin slices and then into 3 or 4 mm wide strips. Or do it with the help of a vegetable peeler or a kitchen mandolin.
  2. Make the red pesto. Clean the chives by removing the roots, the first layer and the hardest green part; then wash and dry it. Peel the garlic, too. Drain the tomatoes that you had soaked. Remove the fine skin from the hazelnuts. Wash the thyme and separate the leaves. Chop all the ingredients very fine and mix them in a bowl. Finally, add the Parmesan cheese and 3 tablespoons of oil, and stir until everything is well integrated. Cover with plastic wrap and let the pesto rest until ready to serve.
  3. Cook the noodles and serve. To do this, you just have to blanch the zucchini noodles in boiling water with ½ teaspoon of salt for a couple of minutes. Then remove them and let them drain in a colander. And finally, distribute them among 4 plates, garnish with the red pesto on top and serve immediately.

Tastier zucchini noodles

If you want to give your zucchini noodles a tastier touch, instead of blanching them with water, you can sauté them in a wok or in a non-stick pan with a string of oil. They are really delicious.

Suitable for vegetarians

As they do not contain meat or fish, these noodles are suitable for vegetarians. And if in the red pesto you dispense with the Parmesan, which is a dairy of animal origin, they could also fit in a vegan diet.
