The roast beef alone is not one of the more caloric dishes there, but its traditional accompaniment: the mashed potatoes.

In our 100% guilt-free version of the recipe, we've replaced it with applesauce (saving us nearly 300 calories). A puree that, in addition to being much lighter than the potato, gives the roast beef a much more festive touch and that sweet touch that pairs so well with meats. Rich, rich, rich …

How to do it step by step

1. Cook the meat. To do this , first you have to do is preheat the oven to 180 or . While it is heating up, season the meat and brown it in a frying pan with a few drops of oil. Then, transfer it to an ovenproof dish and roast it in the oven for about 30 minutes, if you like pink meat, or about 60 minutes if you prefer it more cooked. Finally, remove it and, once cool, cut it into slices as thin as possible.

2. Prepare the puree. First, peel the apples, remove the core and chop them. Then, put them in a saucepan and cook them covered over a very low heat along with 4 tablespoons of water for approximately 20 minutes. Towards the end of cooking, remove the lid and just cook them over high heat so that the liquid evaporates. Then, remove them from the heat and pass them through the food processor.

3. Plate and serve. Add a touch of salt and pepper, cinnamon powder and a few drops of juice from the roast of the meat to the applesauce. Now you just need to serve the roast beef slices, drizzled with the juice from the roast and accompanied by the apple puree.
