The truth is that there are infinite recipes for stuffed potatoes, but we really like this light version of the classic cheese stuffed potatoes.

The secret is as simple as it is effective. Instead of the roquefort of the traditional recipe, we put fresh cheese with 0% fat. And to give it more body and flavor, we add red pepper, aromatic herbs and garlic .

The result is a 100% guilt-free recipe that you can take every now and then with no regrets. And it is that it has almost 100 calories less than potatoes stuffed with roquefort, which is not little.

And since it does not carry any food of animal origin, except cheese, it also fits for all those looking for vegetarian recipes.

How to make light stuffed potatoes step by step:

  1. Preheat the oven. First of all, preheat the oven to 200º. Meanwhile, take the opportunity to chop the parsley and chives. As well as cleaning and dicing red pepper.
  2. Prepare the cream. First, finely chop the garlic and beat it together with the cheese and a pinch of pepper. Then add the diced red pepper, thyme, parsley, and chives. And reserve in the fridge.
  3. Bake the potatoes. Wash the potatoes, salt and pepper them, wrap them in parchment paper and place them on a cookie sheet. Then, bake them for about 40 minutes at 200º.
  4. Fill and serve. Make a cut in the potatoes, open them slightly, remove part of the interior and fill with the cream. Serve one pair per person on individual plates.
