When the temperatures start to rise, it seems that we want more white and rosé wines, although we do not have to give up a good red, although, in this case, we usually prefer a young one, which allows us to drink it between 12º and 15º.

WHICH WHITE WINE IS BEST FOR SUMMER

In our country we have excellent white wines (Rueda, Ribeiros, Albariños, Penedès …). To find out what they look like, look at the color. When the white is paler, it is young wines, while when the gold is more intense, it indicates that they are aged.

Pair with … Pasta, rice, fish, seafood, meat and, depending on the white, cold cuts.

Temperature to serve them. Between 8th and 10th. Don't fill the cup too much. It is better to serve a small quantity and refill, to be able to continue enjoying a fresh wine when the outside temperature is high.

The best glass for white wine. It is usually a smaller glass than the red one, in the shape of a tulip with the mouth somewhat more closed.

Increasingly valued, rosé wines are very refreshing and have good acidity. The classic rosés have a color that ranges from cherry to raspberry, but there are more and more pale rosés, more similar to those produced in France, which are for (almost) immediate consumption, not for storage.

Pair with… Fresh cheeses, light sausages like cold cuts of turkey and, why not, pizzas and empanadas. Depending on the type of rosé, also with Iberian ham or pasta dishes.

Temperature to serve them. Between 8th and 10th. As in the case of whites, it is better to serve a small quantity and renew the wine as it is consumed, so that we can always enjoy it at the right temperature.

The best glass for rosé wine. One of a rhomboidal shape, Burgundy type, domed, with a short stem and a more closed mouth than the tulip.

WHICH RED WINE IS BEST WHEN IT'S HOT

Young wines are the best for summer They are not aged or, if they do, it is not more than 4 months. They are usually fruity, fresh and light wines. They are deep red wines that are usually kept for no more than two years, although it is better to do so within the same year of production.

Pair with … Simple, not very elaborate meals, such as salads, pasta, legumes, eggs and fish, but also for rice dishes and grilled dishes.

Temperature to serve them. You can serve it up to 12º, while the aged reds usually serve between 16º and 20º.

The best glass for young red wine. A Bordeaux type glass, tall, with the mouth more open than the Burgundy glass.
