Whether you are celiac or looking for an alternative to gluten-free or cereal-free sandwiches, you have to try these lettuce wraps with fruit and vegetables, a vegan recipe, since it does not have any ingredients of animal origin.

Wraps are a variant of tacos, burritos or fajitas, the typical Mexican dishes in which a filling is wrapped in a tortilla made of wheat, corn or other flat breads.

In this case, we substitute lettuce leaves for the tortilla or flatbread, which removes the gluten from the recipe. And instead of the traditional filling (which usually has chicken, beef or seafood) we put fruits and vegetables, with which we achieve that this 100% vegetarian recipe is also 100% guilt-free vegan .

How to make lettuce wraps with fruit and vegetables step by step

  1. Prepare the filling. Wash all fruits and vegetables very well. Take off the tough part of the lettuce, as it makes it harder to roll. And cut the rest of the fruits, leaves and vegetables into julienne or thin slices.
  2. Make the base. To wrap each wrap, use two lettuce leaves. Layer them and, on top, place a little of each vegetable and fruit, chopped parsley, sprouts and chopped nuts. To garnish it, you can add a little guacamole, hummus, or accompany it with a light vinaigrette or lemon juice.
  3. Roll up the wrap and serve. Roll it up and, if you want, close it with food-grade cotton string or pierce it with a pair of toothpicks so it doesn't fall apart. And serve it as is or store it in a container, preferably in the refrigerator, until ready to consume.

An exotic touch

You can also make these wraps with Chinese cabbage or cabbage leaves. And if you want to add a "sushi" touch, wrap it with a sheet of nori seaweed instead of lettuce.
