4 leeks
1 liter of vegetable broth
1 glass of skim milk

If you are a fan of this leek cream of French origin, you will fall in love with our super light vichyssoise, a vegetarian recipe with 125 calories less than the traditional one and all the flavor.

The trick is super simple: substitute some of the ingredients for versions that are much less caloric, but no less tasty for that. We have changed the potato for apple; cream or milk cream, for skimmed milk; and the chicken broth, for a vegetable broth, which is much less greasy.

Result: a super light cream and therefore 100% guilt-free. And if you want a vegan version, you just have to do without milk to eliminate all traces of ingredients of animal origin. And in return, add a quarter of peeled zucchini to the vegetables, which will give it body and consistency.

How to make a super light vichyssoise step by step

  1. Prepare the vegetables. On the one hand, clean the leeks, remove the base and the green part and chop the white part. And on the other, peel the apples and cut them into squares to be able to cook them more easily.
  2. Brown and cook. In a non-stick frying pan, sauté the apples and leeks with the help of a thread of oil, and a little salt and pepper. Once golden brown, add the broth and cook the whole for about 20 minutes or so.
  3. Blend and make the cream. Once cooked, crush everything with the help of a kitchen mixer, and gradually add the milk and let it reduce a little until it acquires a cream consistency. Now you just need to serve it in bowls or deep plates with a thread of oil on top.
