8 medium eggs
12 cherry tomatoes
2 balls of fresh mozzarella

The game that tortillas give is infinite. You can make tortillas with almost any ingredient. A perfect way to combine the nutritional power of the egg with the extra provided by the filling in question; in this case, fresh mozzarella and cherry tomatoes. In other words, the typical caprese salad, converted into an omelette. An easy, inexpensive, very complete and even light dish, if you opt for a light mozzarella, and to lick your fingers!

How to do it step by step

  1. Wash, dry and chop the aromatic herbs, reserving some to decorate.
  2. Wash, pat dry and halve the cherry tomatoes.
  3. Drain the mozzarella balls from their preservation liquid. Cut each of them into six slices and the largest ones in half.
  4. Crack and beat two eggs. Add a pinch of salt and pepper and a pinch of the chopped herbs.
  5. Heat a frying pan, about 15 cm, greased with oil. Pour in the beaten egg mixture and let the part that touches the pan set for 2 minutes.
  6. Spread over half the tortilla a quarter of the cheese and three of the split tomatoes.
  7. Finally, with the help of a wooden spatula, fold the tortilla, on the part that does not have the filling, closing it in half. How if you make a crepe.
  8. Repeat the process with the rest of the tortillas. And finally, serve them garnished with the reserved fresh herbs.

Magic touches for a perfect result

To make the tortillas more fluffy, beat the whites separately and add the yolks at the end.

If you want a more intense flavor, you can change the mozzarella for cubes of a stronger cheese: a cured manchego or a goat roll, for example.

And so that the filling is not completely raw, once the step by step is completed, slide the tortilla gently from one side of the pan to the other for approximately 1 minute. This will ensure that the tortilla does not stick or burn and the filling, on the other hand, is hot and cooked a little.
