A handful of kombu seaweed
The juice of ½ lemon
2 tablespoons olive oil
1 teaspoon salt
200 g kale
Oil, coriander, parsley, lemon and toasted sesame oil dressing

The avocado is, without a doubt, one of the favorite fruits in the writing and it is that, in addition to being versatile, it has multiple benefits for the heart. Its "healthy" fats protect against cardiovascular disease and also have satiating properties.

If to this wonder we add the benefits of kombu seaweed –it provides us with potassium, calcium and iodine, has antioxidant properties and helps improve intestinal flora– and the potency of kale cabbage –it has vitamin C, E, A and K and we provides calcium and iron - we have before us a real health bomb.

So fall in love with this avocado and kombu seaweed pate along with kale coleslaw. Besides being a delicious combination, you will be providing an extra dose of health to your body and your bones. And since it is a super simple vegetarian recipe, it can get you out of trouble when you have vegetarian or vegan guests, for example.

How to make the avocado and kombu seaweed pate

  1. Make the pate. Soak the seaweed in water for 1 minute or so and chop it up. Make a puree with the avocado, add the soaked seaweed, the juice of half a lemon, two tablespoons of oil, a pinch of salt and store this preparation in the fridge.
  2. Prepare the salad. Strip the kale by discarding the stem. Add salt and mix well, squeezing it a little with your hands. Let it rest for at least ½ hour.
  3. Make the dressing. Water it with two tablespoons of olive oil, one of chopped coriander and one of parsley, the juice of half a lemon and three drops of toasted sesame oil.
