If like us you are a fan of paella, and you do not want to give it up even if you are on a diet, sign up for our recipe for light paella. A version with 400 kcal less per serving than the traditional one.

And what is the catch? Super simple. Bring just the right amount of rice. We have put an average of 60 grams per person. As a general rule, the recommended is 50 grams when dieting and 70 for a normal recipe.

It only has seafood, prawns and mussels, and not a trace of the classic pork ribs or other fatty meats. And we have also reduced the oil to the minimum possible expression. Only three tablespoons to sauté the vegetables.

Result, a delicious and 100% guilt-free paella .

How to do it step by step

  1. Sauté the onion, pepper and mussels. Put the three tablespoons of oil in the pan with the washed and chopped onion and pepper, as well as the mussels. And sauté over low heat until the vegetables are soft and the mussels open.
  2. Add the tomato, rice and broth. First, add the grated tomato and fry for about 5 minutes or so. Then, add the rice, brown it for about 2 minutes. And finally, add the broth.
  3. Add the seasonings and the prawns. Add the crushed garlic, minced parsley and saffron, and boil until the broth is consumed. And halfway through cooking, add the prawns.
  4. Let stand and serve. Once the broth has been consumed, let the rice rest for about 10 minutes with the pan covered, then serve it.
