The Eggs Benedict is a dish made with bread, poached eggs, bacon and hollandaise sauce or other toppings. A time bomb for any diet for both the bacon and the hollandaise sauce, a butter-based sauce that is bursting with calories on all four sides.

However, there is no reason to give them up forever. Our low calorie eggs benedictine recipe is much less heavy than traditional eggs - they are 200 calories less - and therefore 100% guilt free, so you can afford to eat them every now and then.

To achieve this, we have replaced the bacon with avocado, which in addition to giving it a juicy and fresh touch, is very healthy, since it is very rich in oleic acid, beneficial for the heart.

And we have lightened the sauce by reducing the amount of butter and yolks (normally it has 200 g of butter and 4 yolks). As well as adding a touch of mustard, a sauce that is included in the group of spices with a fat-burning effect, since it is made with seeds that, thanks to their vasodilating power, accelerate the burning of fats.

How to Make Low Calorie Eggs Benedictine Step by Step

  1. Make the sauce. Beat the 2 yolks with 1 tablespoon of mustard. And add, little by little, 50 g of previously melted butter, 2 teaspoons of lemon juice, the chopped dill and salt, and the 2 egg whites, whipped until stiff. Mix and reserve the sauce in the fridge.
  2. Prepare the avocado. Peel it and cut it in half with the help of a sharp knife. Remove the bone with the tip of the knife. Cut it into slices and sprinkle them with lemon to prevent them from browning. And reserve them.
  3. Poach the eggs. Line a cup with transparent film, crack 1 egg, close forming a bag and cook for 4 minutes in water; and repeat with the other three.
  4. Assemble the Eggs Benedictine. Cut the loaves in half, toast them and top with the lettuce, avocado slices, poached egg, and a tablespoon of sauce.
