    Macaroni with minced meat

    Macaroni with minced meat

Macaroni with minced meat and tomato sauce is one of those dishes that are never lacking in children's menus but that many adults also secretly love. For me, personally, I am transported to my childhood and I need to indulge myself from time to time to remember it. And if you make them with a lot of love and a special touch, like these, it doesn't have to be such a basic dish.

    Step by Step

    1. Peel 2 onions and 1 clove of garlic and chop them finely. Clean 100 g of bacon by removing the crust and the lambs and cut it into strips. Grate 80 g of soft cheese.
    2. Heat oil in a frying pan and sauté the onion and garlic for about 8 minutes, stirring from time to time. Add the bacon and 150 g of minced pork and sauté for another 2 minutes.
    3. Add 300 ml of crushed tomato and sauté for 15 more minutes. Pour in 200 ml of liquid cream, season with salt, pepper and a pinch of nutmeg, and cook for another 2 minutes.
    4. Cook 350 g of macaroni in a saucepan with plenty of salted water according to the manufacturer's instructions. Drain, mix with the sauce and place in a platter or four oven-safe plates.
    5. Sprinkle with the grated cheese and gratin under the oven grill for 3 to 4 minutes, until the surface is golden brown.
    6. Garnish with fresh washed thyme leaves and serve hot.
    • If you want a lighter version, skip the bacon and use minced chicken meat, which is leaner than pork.

    Minced meat pie

    Minced meat pie

Empanadas are one of the stars of the kitchen of use. They can be filled with practically any fresh or cooked food that you find in the fridge and want to spend so that it does not spoil. This one, for 8 servings, we make it with minced meat and blood sausage, and yes, it's true, it's a bit bomb (but from time to time you want to go overboard …).

    Step by Step

    1. Peel 1 onion and grate it; Cook for 10 minutes in a pan with a drizzle of oil.
    2. Salt and pepper 350 g of minced meat (half pork, half beef) and remove the skin ½ onion black pudding; crumble it and add it to the onion along with the meat.
    3. Mix and cook until it changes color; add 25 g of pine nuts and add them; stir, remove and let it temper.
    4. Lay a round sheet of puff pastry on the plate, pierce it several times and put the filling on top; cover with the other sheet, trim the edges and set them aside.
    5. Seal everything around, so that both layers stick together; form balls with the reserved edges and decorate the surface of the pie with them.
    6. Paint with beaten egg, bake for 30 minutes at 180 ° and serve.
    • To lighten it, you can substitute the blood sausage and part of the minced meat for a ratatouille or a stir-fry of vegetables and hard-boiled egg, which are not so caloric and are also very rich.

Tricks to make minced meat healthier and juicier

    • Skip the packaged minced meat, in which you don't control what it actually takes, and ask the butcher to chop it expressly and in front of you.
    • If you want it to be softer and juicier, mix the most potent meats with pork or turkey or chicken.
    • For hamburgers or meatballs, it is not necessary that it be very minced, it is enough that they pass it once through the mincer.
    • For a filling, roll, meatloaf or Bolognese sauce, better chop it a couple of times.
    • In the fridge, you have to keep it in an airtight container and not more than a couple of days.
    • And frozen ground beef holds you well for about 3 months.

Which pieces of meat are the most suitable

    • If it's beef, choose cuts with bacon, which are more tender: marlin, yearling, shoulder or skirt.
    • If it's pork, opt for lean or shoulder.
    • If it is chicken or turkey, the most indicated is the skinless breast (the packaged usually carries it).
    • If it's lamb, choose the shoulder and leg.

Be very careful with packaged minced meat

It can have other ingredients (cereals, spices, additives, colorings …) that make it into the list of bad ultra-processed foods. And it is not recommended for the health of the planet either because it is usually packaged in plastic containers, totally expendable.
