Despite being a very common food in many countries around the world, it was relatively recently that we introduced quinoa to our daily menus.

In addition to being a very versatile product that can be combined with many other foods, it has so many benefits that you should start using it more often. It provides us with fiber, protein and is also an excellent source of calcium. And since it is gluten-free, it is perfect for people with celiac disease.

You can prepare this pseudocereal in many different ways, such as this quinoa salad with pepper and mushrooms that we propose. A very simple recipe 100% vegan and, therefore, vegan, that will not take you more than 30 minutes.

How to make quinoa salad with pepper and mushrooms step by step

  1. Wash the quinoa. To do this, use a container with cold water, add the quinoa, stir it and drain it. Do this process about 3-4 more times to make sure it's clean.
  2. Cook the quinoa. Once clean, add three parts of water for each part of quinoa, and cook for 15 minutes. Remove it from the heat once the grain is ready and let it rest.
  3. Prepare the vegetables. Clean and wash the mushrooms and peppers well. Cut them into squares and fry them together. When they're ready, take them off the heat and let them cool.
  4. Assemble the salad. Cut the lemon into two parts and prepare a juice with one of the two halves. Next, mix the quinoa with the vegetables, and add the juice of half a lemon, salt and pepper to taste.
  5. Plate and serve. To present it in an original way, use a plating ring, a round mold or a bowl, and decorate it with parsley leaves on top.
