How to do it step by step

  1. Cook the peas and eggs. On the one hand, shelling the peas, wash them and scald them, 2 or 3 minutes, in plenty of boiling water –although you can also throw some frozen peas if you need to buy time–. And drain them and cool them in very cold water. And on the other hand, cook the quail eggs in a saucepan with salted water, 3 or 4 minutes. Refresh them with cold water, peel them and cut them in half.
  2. Prepare the vegetables. Wash the tomatoes, dry them and cut them in half as well. Peel the onion, chop it and fry it, about 7 minutes, in a frying pan with 3 tablespoons of oil.
  3. Sauté the peas. Add the drained peas to the set, salt and pepper and sauté, 5 or 6 minutes. Meanwhile, rinse the corn and drain it. When the peas are already sautéed, add the corn and continue cooking for 1 more minute.
  4. Assemble the plate and serve. First, divide the preparation into individual bowls, and then add the tomatoes and eggs. Finally, drizzle with a few drops of oil, salt and pepper to taste and serve.
