The fundamental trick is to substitute the eggs, flour and sugar of the traditional recipe for the banana puree. An idea as simple as it is effective and that, in addition to providing an additional flavor and aroma, is 100% guilt-free. It takes more than 500 calories from the recipe of a lifetime.

We have used this light pastry cream to fill some mini-tarts made with minced biscuit and light margarine. But you can find them already prepared. And for the coverage we have put some medlars, although practically any fruit you like fits.

How to make light pasta cream step by step

  1. Make the banana puree. First, peel the bananas and mash them until obtaining a fine puree, and reserve.
  2. Heat the milk. In a saucepan, heat the skim milk with the vanilla branch and the sugar. And when it boils, carefully remove the vanilla and let it cool a bit.
  3. Prepare the cream. Once the milk has cooled down a bit, you just need to mix it with the banana puree and you have the light pastry cream ready to taste.

More aroma and flavor

If you want the light pastry cream to be even more flavorful and aromatic, when you heat the milk, you can also put a cinnamon stick and the rind of a lemon.
