Ingredients:
400 g pumpkin
2 potatoes
1 carrot
1 leek
700 ml of fish broth
24 prawns
1 glass of cognac
Chive
Olive oil
Black pepper
Salt

Based on prawns, pumpkin and other vegetables, here you have a soft Christmas cream with an incredible flavor. You just have to carefully follow all the steps. It will be so easy for you and it will be so delicious that it will not surprise you that it ends up being a staple of your party recipes.

How to do it step by step

  1. Cook the prawns. First, remove the heads from the prawns, peel the bodies and reserve them. Then heat a pot with a bottom of oil and brown the heads and the "shirts" of the prawns. Finally, remove them and reserve them. Strain the oil where you have fried them to remove any remains that may have remained and put it back in the pan.
  2. Prepare the vegetables. First of all, remove the skin and seeds from the pumpkin and dice it. Scrape, wash and dice the carrot as well. Peel the potatoes, wash, dry and chop them. Clean, wash and chop the leek. When you have all the vegetables ready, sauté them in the seafood oil for a few minutes and reserve.
  3. Make the cream. In another casserole, cook the broth for a few minutes together with the shells and heads of the prawns that you had reserved, crushing them to extract all their juice, and passing them through a strainer. Add this broth to the pot of vegetables, add the cognac and cook until the vegetables are tender.
  4. Finish the dish. Add half of the reserved shrimp tails to the casserole, bring to a boil and blend the whole with the mixer until obtaining a homogeneous cream. Distribute it on the plates and garnish with the rest of the shrimp tails, a touch of black pepper and a few stems of washed chives.

More color and flavor

When you grind the bodies of the prawns together with the vegetables, you can also add scallops or cooked mussels; they will enhance the color and seafood flavor of the cream.
