25g butter
25 g of flour
1 glass of milk
1 clove garlic
100 g pumpkin
2 tomatoes
1 onion
6 piquillo peppers
White wine

There are many who think that cannelloni are fattening. But it does not have to be like that. The ones in our 100% guilt-free recipe are very light and support many variations.

The secret to making these cannelloni much lighter is to replace the classic béchamel used for the topping and filling with a pepper sauce on top. And also lighten the picadillo by mixing the chicken meat with vegetables.

And if you want them to be even less fattening, you can also do without the cheese from the gratin and serve them hot or cold.

How to do it step by step

  1. Cook the pasta. Cook the cannelloni sheets in warm water for the time indicated by the manufacturer. And when they are done, drain them and spread them on a non-stick surface (a glass dish, a cloth on the kitchen marble, etc.).
  2. Sauté the onion and pumpkin. Peel and chop the onion. Póchala in oil together with the pumpkin cut into cubes, until tender.
  3. Add the tomatoes and chicken. Add 1⁄2 glass of wine to the onion and poached squash and let evaporate. Add the peeled and chopped tomatoes. Let it cook for a few minutes and add the chicken.
  4. Prepare the sauce. Sauté the minced garlic and diced peppers in the butter. Add the flour and milk and cook, stirring, until thickened. Season and mash.
  5. Fill and gratin. Place some of the chicken sofrito on each of the cannelloni plates and roll them up. Place them in a baking dish. Water them with the piquillo pepper sauce. And finally, sprinkle with cheese and gratin.

Vegetarian version

If you want a vegetarian version, you can do without the chicken and add more vegetables: zucchini and eggplant, for example.
