Tricks to make varied canapes

  • The bases. Remember that practically any bread or toast works as a base. You don't have to complicate your life. But if you want to give them a more sophisticated touch, you can opt for volcanoes, precooked puff pastry or blinis. This is what we have done with our puff pastry canapés with prawns, and with the smoked ones on blinis.
  • The preparations. One of the tricks that does not fail is to prepare it in a big way, although then we present it in portions. For example, you can make canapes with a whole loaf of bread. Cut it lengthwise, as if you were making a sandwich. Cover the two whole halves with the filling or topping you had in mind. And only at the last minute, cut into small portions and garnish individually.
  • The timing. One of the advantages of most assorted canapes is that they are served cold, so they can be prepared well in advance, so you won't be tied up with your apron until the last moment. You only have to be careful with those toppings that can soften the bases (liquid or wet foods) or that go ugly when oxidized (such as, for example, avocado). In these cases, you can advance part of the preparations and only leave the assembly of the dish and the presentation for the end.
  • The presentations. It is not always necessary to use bread or crepe bases for canapes. You can also serve its ingredients in shot glasses, individual flan dishes, cupcake molds, ceramic spoons, wooden skewers …
  • The ingredients. The only limit when it comes to making canapes is set by your imagination. You can make them anything you like, and any normal dish can be converted into canapés. Do not forget that it can be a way to take advantage of leftovers in an original and sophisticated way. A rest of ratatouille or Bolognese sauce, for example, you can put it on some slices of bread with a little grated cheese on top and gratin it. You will have some delicious mini pizzas!
