  • 6 eggs
  • 180g sugar
  • 185 g of flour
  • 70g butter
  • ½ lemon
  • A little vanilla essence

Gather them all together and leave them at room temperature.

The first step you must do is crack the eggs in a large bowl, add the sugar and beat them for between 6 and 8 minutes with electric rods, until they are foamy and whitish, and have more or less doubled in volume.

Wash the lemon, dry it and grate the skin, avoiding the white part. Add a teaspoon of this zest to the previous preparation and stir. Then, add 175g of sifted flour, little by little and mixing gently, until it is integrated. Add a little vanilla essence. Melt 60 g of butter, wait for it to warm and add it too.

Grease a mold about 22 cm in diameter with the remaining butter and sprinkle it with the remaining flour. Pour the dough into it and bake for 30-35 minutes in a preheated 180º oven.
