Prawn and avocado cocktail

Ingredients:
300 g of prawns
2 lettuce buds
2 avocados
8 cherry tomatoes
1 bay leaf
1 glass of white wine
1 lemon
Pepper
Salt
1 glass of mayonnaise
3 tablespoons ketchup
A few drops of tabasco

The prawns cooked with very little fat and lots of flavor, perfect tandem. You can accompany them with salad and avocado, and a touch of pink sauce - as in this prawn cocktail - and you already have a first course that does not knock you out.

A rich, fast, easy and quite inexpensive recipe that suits you both in a party lunch or dinner, due to its sophisticated look, and in your daily menus to give yourself a light but succulent tribute. Something that should be mandatory by prescription… at least once a week!

How to do it step by step

  1. Prepare the pink sauce. Squeeze the lemon and filter the juice. Reserve half and mix the rest with the mayonnaise, the ketchup, the drops of tabasco and a touch of salt and pepper. Finally, pass everything through the blender until you get a smooth and homogeneous mixture.
  2. Cook the prawns. In a saucepan with salted water, the washed bay leaf and the wine, cook the prawns for about 4 minutes. Once cooked, drain them, let them cool, remove the head and skin and set them aside.
  3. Make the salad. On the one hand, wash the cherry tomatoes, dry them and reserve them. On the other hand, peel the avocados, cut them in half, remove the bone and cut them into cubes. Then clean, wash and julienne the lettuce heads. Drizzle the avocado and the buds with the reserved lemon juice.
  4. Assemble the platter. In four more or less large glasses, divide the buds, the avocado, the cherry tomatoes and the cooked prawns. Sprinkle each one with a touch of pink sauce and leave in the fridge until ready to serve.

Lighten up the cocktail and other delicious alternatives

If you prefer a lighter version of this prawn cocktail, skip the pink sauce and replace it with a light vinaigrette. And you can enrich the salad with other fruits that you like: diced apple, grapes, pineapple, mango … Imagination to power!
