Ingredients:
FOR THE VANILLA DOUGH
8 egg yolks
220 g icing sugar
120 g of liquid cream
1 vanilla bean
165 g flour
3 g baking powder
65g butter
FOR THE CHOCOLATE DOUGH:
70 g dark chocolate fondant with 70% cocoa
4 egg yolks
120 g icing sugar
70 g whipping cream
80 g of flour
5 g cocoa powder
2 g baking powder
20 g of sunflower oil

If you are tired of the classic sponge cake, try this brownish chocolate and vanilla sponge cake . A delicious dessert that can be used as a party snack as well as a special lunch or dinner.

How to do it step by step

The vanilla dough:

  1. Leave the butter in a bowl at room temperature until it becomes soft. Cut the vanilla bean in half lengthwise. Scrape the seeds with the tip of a knife and add them to the butter.
  2. Add the yolks, the sugar, the cream and the flour sifted with the yeast to the butter. And beat the whole with the rods until you get a cream with a smooth texture.
  3. Put the resulting dough in a pastry bag and reserve in the refrigerator.

The chocolate mass:

  1. Chop the chocolate and heat it in a double boiler, stirring with a spoon until it is melted. Reserve it warm.
  2. Put the yolks, the sugar, the cream and the flour sifted with the yeast and cocoa in a bowl. Beat with the whisk until a homogeneous mixture is obtained and add the previously melted chocolate together with the sunflower oil. Continue beating until you get a matte cream with a smooth texture.
  3. Put the dough in another pastry bag and also reserve it in the fridge.

And make the cake

  1. While the oven is preheating to 150º, line a rectangular mold with parchment paper and cover the bottom with a third of the vanilla mass using the pastry bag.
  2. With the other pastry bag, arrange half of the chocolate mass on top, distributing it lengthwise. Cover it with another third of the vanilla dough and repeat the operation. Last will be a layer with the third of the vanilla mass that was left.
  3. Bake the cake for 50 minutes. Prick it in the center with a skewer or a knife and check that it comes out clean; if not, cook for a few more minutes.
  4. Remove the cake from the oven, let it cool on a rack and unmold it.

How to present it

In cold weather, it is ideal as a snack accompanied by a cup of hot chocolate, a coffee with milk or a tea. And in hot seasons, it is delicious accompanied by a glass of horchata or meringue milk.
