Traditionally, quiche is a savory tart with a shortcrust base and filled with a mixture of eggs, liquid cream and various ingredients, which is usually quite caloric.

However, it doesn't have to be that way. Our low-fat vegetable quiche has almost 175 calories less than a lifetime thanks to the fact that we have not used cream, butter, or bacon (which are very greasy).

Instead, we have put cottage cheese, light cheese, oil and vegetables, which are much less fat and result in this delicious vegetarian recipe without any regrets. Or what is the same: 100% guilt-free.

  1. Prepare the vegetables. First, clean and dice the aubergines and peppers. Then sauté them in 4 tablespoons of oil for about 10 minutes, stirring gently. And halfway through cooking, add the chopped tomato.
  2. Mix all ingredients. First of all, beat the eggs with salt and pepper. And then toss them with the cottage cheese, grated cheese, and drained vegetables.
  3. Bake and serve. Preheat the oven to 180º. Meanwhile, grease a mold with oil and line the base and walls with the shortcrust pastry. Then, puncture the bottom and pour the filling. Bake for about 45 minutes until the quiche is set. And finally, unmold. It can be served both hot and cold.

If you want your quiche to be much lighter, and super filling, you can substitute part of the filling for mushrooms, which have almost no calories and instead fill a lot.
