(Traditional version: 229 kcal - Light version: 125 kcal)

Here's an ultra-light cottage cheese mousse, a super easy dessert that also only has 125 calories! So you can eat it without any regrets, because it is 100% guilt-free.

The keys to lightening this mousse are very simple: do without the cream, and replace it with skimmed milk; use only the egg whites, and change the sugar for powdered sweetener.

A strategy as simple as it is effective with a delicious and irresistible result.

How to make ultra-light cottage cheese mousse step by step

  1. Prepare the gelatin. First, dilute the gelatin in the skim milk (at room temperature). And then, mix it with the cottage cheese and the sweetener, trying not to leave lumps with the help of some rods.
  2. Mount the whites and mix everything. First of all, mount the whites to the point of snow. To make them firm and fluffy, you can add a pinch of salt. And once assembled, add them to the cottage cheese with wrapping movements from bottom to top to prevent them from 'deflating'.
  3. Plate and serve. Finally, you just need to distribute the mixture into bowls, individual flan or glasses, and let it cool in the fridge for a few hours before serving. To decorate, you can opt for the classic touch of honey, or try the accompaniment of the following trick.

Thyme syrup with peaches

For the decoration, we have opted for a couple of peaches cut into small cubes that we have marinated in a thyme syrup.

You only have to cook for about 5 minutes two glasses of water with two tablespoons of brown sugar and two sprigs of fresh thyme, and add the cubes and cook for 2 more minutes.
