Crepes are one of those traditional dishes that fit both as dessert, breakfast, snack, and even as a single dish. It all depends on the strength of the ingredients of the filling, and if they are sweet or salty.

The downside is that they are almost always restricted to a few palates due to their high calorie content … Unless you have our secret formula to lighten them to the maximum, and turn them into super light and 100% guilt-free crepes. A light dessert, and suitable for almost all audiences.

The secret is super simple: use skim milk instead of whole milk. And substitute half of the flour that is usually put with a wholemeal flour, which is more satiating with less quantity. This way we reduce up to 125 calories, which is not little.

How to make crepes step by step:

  1. Prepare the dough. First, beat the eggs with the two types of sifted flour, the sugar, the skim milk and 20 g of butter. And let it rest for about 30 minutes or so in the fridge.
  2. Make the crepes. Put a non-stick frying pan on the heat, and grease it with a kitchen paper soaked in oil. Thus, in addition, you will not exceed the amount of oil. Stir the dough, pour in 2 tablespoons, brown on both sides. And repeat the same operation until the dough is exhausted.
  3. And fill them. You just have to spread them on a plate, put the previously washed berries inside. And if you want, to decorate, you can water them with a string of melted chocolate.
